The Most Eye Catching Mushroom You Can Grow

Every time we post a photo of a pink oyster flush, someone asks if it has been edited. It has not. Pleurotus djamor really is that colour, a vivid coral pink that fades slightly as the caps mature. This pink oyster mushroom grow kit comes as a 1.6kg block that is fully colonised and ready to fruit, so you can go from box to harvest in roughly ten days to two weeks.

What Is Included

  • 1 x 1.6kg pink oyster mushroom grow kit
  • 1 x ultra fine mister
  • Access to our online growing guide

How to Grow Pink Oysters

  1. Open the perforated panel on the box and cut a small X into the bag behind it.
  2. Stand the kit somewhere bright with no direct sun. Pink oysters are a tropical species and are happiest between 18 and 28°C, so they suit warm rooms better than most mushrooms.
  3. Mist the cut two or three times a day to keep it damp.
  4. Harvest the cluster as soon as the caps flatten and the edges start to curl upwards. Pink oysters age quickly, so do not leave them too long.
  5. Rest, soak and repeat for a second flush.

Keep the kit out of cold draughts. Pinks sulk below about 15°C, which is why they are such a good pick for summer or a warm kitchen. A humid fruiting tent helps a lot if your room is dry.

Cooking Pink Oysters

The pink colour mostly disappears in the pan, turning a golden orange, but the flavour is the real reward. They have a slightly woody, almost bacon like savouriness when fried until crisp. Try them shredded and pan fried with smoked paprika and soy sauce in a sandwich. They do not keep well in the fridge, so cook them within a day or two of picking.

Good to Know

Pink oysters produce a lot of spores as they mature, which can leave a pink dust on nearby surfaces. Picking them a little early keeps this to a minimum and gives a better texture anyway.
